The New Glucose Revolution Shopper's Guide to GI Values 2006 is now available in the US. It's published by Marlowe & Company and has the GI values of around 500 foods. Low GI Eating Made Easy (also published by Marlowe & Company) has a complete section on breads and cereals which may be of use (starting page 146). This has only recently been published (November 2005) so may not be in your local library yet.
