Then of cou...Hi Julia, Your comment made me laugh. Then of course I instantly reached for my invaluable copy of Charmaine Solomon's Encyclopedia of Asian Food. Bitter melon (also called bitter gourd) can be eaten raw or cooked but Charmaine says either way you need to degorge them first by slicing thinly and sprinkling with salt or a mixture of salt and turmeric to draw out some of the liquid and the bitterness. Then you need to dry the slices on paper towels before proceeding with the recipe. Charmaine gives several recipes including salads and curries. I'll contact her and ask her permission to include one in next month's GI News.
